When it comes to baking I love to try new things. Lately my cookie decorating obsession is a little out of control. I have a list about a mile long of cookies that I want to make. I keep ordering more cutters to add to my collection. I know not everyone has the time to take an entire weekend just to make some decorated cookies, and neither do I. But that doesn't stop me from trying. So, I have been trying to manage my time a little better, and use up ALL of my dough and icing before making a new batch. I don't think icing works as well the next day, but since I don't like to waste it, I try to find easy cookie designs so that I can use it up. After spending an entire day working on cookies that didn't turn out like I had planned, I was a little frustrated. But still, I had extra icing. So I decided to make some easy pansy cookies.
I have made these cookies before, I had found a similar design on Pinterest somewhere about a year ago. I made these ones quickly since I wanted to get them done and use up the left over icing. I rarely use sanding sugar on my cookies, but since I didn't care about how these ones turned out too much, I decided to try it out. (I have a lot of sanding sugar that I need to use up as well.) They aren't perfect, but I don't think people will have a problem eating them!
